Nisin Z is a bacteriocin polypeptide antibiotic known as a lantibiotic. Nisin is produced by gram-positive bacteria to reduce competitive strain from other gram-positive bacteria.</br>Nisin Z is toxic against other gram-positive bacteria by forming pores in the membrane leading to cell death.
