Naringinase (Cat No.: M013808) is a multi-enzyme complex composed mainly of α-L-rhamnosidase and β-D-glucosidase, which catalyzes the hydrolysis of naringin, a bitter flavonoid glycoside found in citrus fruits, into the non-bitter compound naringenin. It is widely used in the food industry to debitter citrus juices and enhance flavor. Naringinase is also applied in biotransformation, pharmaceutical synthesis, and nutraceutical production to modify flavonoids and improve bioavailability. Its ability to selectively hydrolyze glycosidic bonds makes it valuable in enzymology, plant chemistry, and industrial biotechnology research.
