D(-)-Isoascorbic acid(CAT: R043081), also known as erythorbic acid, is a stereoisomer of ascorbic acid (vitamin C) with strong antioxidant properties. It is commonly used in the food industry as a preservative (E315) to prevent oxidative spoilage and maintain color and flavor stability in processed meats, beverages, and canned goods. Though not biologically active as vitamin C, erythorbic acid effectively scavenges free radicals and inhibits oxidative degradation of sensitive compounds. It is also utilized in cosmetic formulations and industrial applications requiring oxygen-sensitive stabilization.
